A traditional Italian appetizer, friselle are dry, crunchy buns, rehydrated and topped with fresh ingredients. In this recipe, the friselle are garnished with juicy cherry tomatoes, aromatic basil, and mackerel fillets in organic olive oil from Rizzoli, offering a delightful combination of flavors and textures.

Ingredients

  • 4 friselle
  • 500 g of red and yellow cherry tomatoes
  • 1 garlic clove
  • 220 g of mackerel fillets in organic olive oil Rizzoli
  • 1 bunch of fresh basil
  • Salt, to taste
  • Extra virgin olive oil, to taste
  • Black sesame seeds, for garnish

Instructions

  1. Wash and dry the cherry tomatoes. Cut them into small pieces and season with salt, extra virgin olive oil, and chopped fresh basil leaves. Set aside to allow the flavors to meld.
  2. Rub each frisella or toasted bread slice with the garlic clove to impart a subtle aroma. If using friselle, quickly dip them in cold water to slightly soften them, then drain well.
  3. Place the friselle or toasted bread slices on a serving platter and evenly distribute the tomato mixture over each. Add the mackerel fillets in organic olive oil Rizzoli on top of the tomatoes.
  4. Sprinkle with black sesame seeds for added texture and visual appeal. Serve immediately and enjoy this delicious and healthy appetizer.
